Out of Eggs

I can't count the number of times I have started making a dessert only to find out half way into it that I don't have any eggs. This has started happening a lot since I taught my 2 older kids how to make scrambled eggs by themselves. It is usually on a Sunday evening that this happens to me. Since we observe the Sabbath Day, that means no going to the store. I also refuse to go to a neighbor and borrow anything. A few months ago Maceys was having a big case-lot food storage sale and I saw this product:
I thought it would be good to have in my food storage for an emergency. Not an earthquake or end of the world emergency, but one of my Sunday night dessert making emergencies.
Tonight was one of those nights. My oldest has been asking me to make lemon bars all week long and I finally gave in tonight. I made the crust and had it baking in the oven before I realized that my scrambled egg making kids had raided the last of my eggs. I remembered my dried egg mix and decided to give it a try for the first time. My lemon bars tasted just the same as always and no one could tell a difference.

The only problem is, now I have a gigantic can opened that I will have to use before it goes bad. I wonder if I can buy this product in smaller individual packages?

  1. I bought a similar product the other day. We had an Enrichment on getting our 3 month supply. A lot of ladies in my ward use this powdered egg for bread making and some even say their family tolerates it scrambled (must not be picky eaters). I'm the same way, though. I don't want to open it until I absolutely HAVE to. I'm sure there's some airtight storage options that might work. I don't know how those vacuum bags work on powder, but I do know that a lot of stuff like this can be stored in a Ziploc bag in the freezer to prolong its shelf life. I'll ask around and let you know if I get some ideas from the more food-storage-experienced moms.

    I didn't even thing about freezing! I am going to fill up a bunch of ziplock baggies with individual portions and freeze them today. Now whenever I am out of eggs I can just go to my freezer full of them!
