Easy Cake Mix Cookies

I almost NEVER buy cake mix or any kind of mix. I prefer to make healthy recipes from scratch. However, when I need a lot of cookies I make an exception. I needed to make cookies for 60+ people for the cast of Beauty and the Beast and I didn't have a lot of time and I didn't want to spend a ton of money buying them at the bakery. Why was I making cookies for the cast? My son is in the cast and had rehearsal on his birthday, so I thought it would be fun.
I bought 3 cake mixes for 89¢ each.

Here is the recipe:

Ingredients:
2 eggs
1 (18.25 ounce) package of any flavor cake mix
1/2 cup vegetable oil

Directions:
1. Mix together cake mix, eggs and oil in a large bowl.
2. Make little balls with the dough and set on ungreased cookie sheets.
3. Bake at 350 degrees F for 5-10 minutes.

1 cake mix will yeild 24 servings

  4. I found this recipe a little while back and it's sooo easy and tasty! The blog I found this idea from uses different flavors of cake mix and says she sometimes adds nuts, chocolate chips, what-ever else you think my make your cookies taste even better. You are only limited by your own imagination!
