Greek Pasta Salad

I have been trying a few new recipes from Rachel's blog: Rachel vs. The Kitchen, and I have loved all of them. A lot of times I will see a recipe on TV and make it only to hate it. Not that way with Rachel's blog. So when I needed a good pasta salad to make for my extended family on the 4th of July, I turned to her blog. I didn't even try the recipe out first before making it for the 4th, that's how much trust I have in her recipes.

Here is the recipe over at her blog: Greek Pasta Salad
or
Here it is now on my blog (I hope you don't mind Rachel)

Greek Pasta Salad
Ingredients:
3/4 cup olive oil
3/4 cup red wine vinegar
2 1/2 teaspoons garlic powder
2 1/2 teaspoons dried basil
2 1/2 teaspoons dried oregano
1 teaspoon ground black pepper
1 teaspoon white sugar
1 pound box pasta (cooked and drained)

3 cups fresh sliced mushrooms
15 cherry tomatoes, halved
1 cup sliced red bell pepper
2 cups broccoli florets, cut into small pieces
3/4 cup crumbled feta cheese
1/2 cup chopped green onions
1 (4 oz) can whole black olives, sliced
12 ounces sliced pepperoni, cut into strips (I found cute mini pepperonis at Wal-Mart)

Directions:
In a large bowl, whisk together olive oil, vinegar, garlic powder, basil, oregano, black pepper and sugar. Add cooked pasta, mushrooms, tomatoes, red peppers, broccoli feta cheese, green onions, olives and pepperoni. Toss until evenly coated. Cover and chill 4 hours or overnight.

Makes about 20 servings

  16. Just before checking Julia's blog I was looking for stuff to serve at our Open House in September. This will be perfect (but I'll leave out the pepperoni) and it's a good sized portion. Where else would one find a recipe for 20? Thanks!
